Most of the time you are just paying for the signature - people have a sneaking suspicion that that branded ink will be better for their printer and so keep buying it but contained by reality nearby is usually no difference. I have never have a problem with generic ink and it really does salvage an awful lot of money especially over time.
Over time, using non-approved cartridges will probably impact the print quality yes. Should this take place within the warranty length of the printer, it would be invalid because you've used non-manufacturer approved inks.

Some maker of generic cartridges are better than others. My experiences with Epson printers and online cartridges have been mostly positive. One merchant in unique produces crap products, but most are good.
