I be required to prepare my final artwork in single K(Black) and M(Magenta). I've tried to convert my images to Greyscale, and convert again to CMYK, afterwards I delete the Cyan, Yellow, and Black channel. But the figure appears less sharp. I wonder is nearby any better way.

The method you use is the just reasonable style to do it. However, if at all possible, use a vector print (such as an eps file) rather than a bitmap-type (raster) print (like a jpeg). If you use a vector image, even beside the loss of colour information, you should still have crisp lines.
Another prospect is to make the statue huge, do your conversion, and then shrink it subsidise down. The pixel averaging used to resize the image should eat up the fuzziness.
