Personally I think it depends on how you want to use your laptop. Will you be working on it recurrently enough that you involve bleeding-edge speed? Or will a laptop that'll save you X hundred dollars and can do like things, albeit a little slower, be fine?

I'm not sure that you can install different graphics cards inside of a MacBook or a MacBook Pro. I be under the summary that you could only install more RAM and a different tricky drive. You can buy the MacBook Pro (rather than a regular MacBook) and you will have a better graphics card beside the MacBook Pro.
The Mac Pro is a different matter, where on earth you can put what ever you want into the tower. You should go to the Apple network site to see what is really available and how much:

You've made the right choice beside your pick of the MacBook Pro and you'll use every bit of the 3GB of RAM, so please don't cheap out on your graphics card.

The larger card from Apple not individual has twice the video RAM, it have a more powerful GPU that will let the rest of your laptop focus on the business of truly running your computer & the operating system.
Simply put, spending the extra bucks on the right card NOW will let your apps do their best living posssible and it will extend the useful existence of your laptop. A graphics/video student needs the best tools to develop their skills: you come across to have picked some great software, in a minute give it the hardware that it wants to work best...go next to the 256 MB card. I don't think you can upgrade the video card surrounded by the Mac once you buy it. You could wait and ask some of your friends if the manners of the graphics card in the MBP is significantly different if you own a 128MB card or a 256MB card
